Easy side dish

Hello friends! Today I’m going to share my favorite easy whole30 side dish with you, creamy mushrooms. These mushrooms take about 5 minutes to make and are super yummy and simple. 
Creamy Mushrooms

Serves 1

  • A handful of sliced crimini mushrooms
  • 1-2 tbs compliant mayo (I make the mayo from It Starts With Food)
  • Ground coriander 
  • Salt and pepper 
  • Garlic powder

Put the mushrooms in a pan with a little oil over medium heat annd add the spices. Stir them around for a few minutes until the start to brown a little then add the mayo, mix and cover with a lid. After about two minutes give them a stir. When the mushrooms start to shrink and there’s liquid in the pan they’re done. 

That’s it. 5 ingredients, a few minutes and you have a super simple and yummy side to serve with your dinner. Happy eating!

Mini Quiche

Hello friends! Today I have a super easy Whole30 breakfast recipe for you. It takes about 25 minutes to make in total. These mini quiches are great in the morning or anytime really when you’re on the go but need to eat. They’re moist, flavorful and chock full of wholesome goodness. Here’s the recipe. 


Mini Quiche

Makes 12

  • 8 eggs
  • Splash of almond milk
  • 1 tsp each of: ground coriander, salt, black pepper
  • A dash of onion powder 
  • chopped or ripped kale
  • Broccoli
  • Compliant bacon
  • Nutritional yeast 

Whisk the eggs, spices and almond milk together until well combined. Put a little of the veggies and bacon in each cup of a 12 cup muffin tin and then pour the egg mix on top. Sprinkle each with a good amount of nutritional yeast. Bake at 350 for 17 minutes. 

 
I store mine in a baggie in the fridge with a paper towel to catch the moisture and then pop them in the microwave for 30 seconds before I head out the door. I love simple recipes that don’t require me to slave over the stove and this is definitely one of those. And of course of you don’t like and of the veggies I added or you want more all of them are totally changeable. Heck, end of the week? Only have a bell pepper and spinach in your fridge? Throw those in there. This recipe is going to taste great no matter what veggies you use because of the spices. And you don’t miss out on the cheesy flavor because of the nutritional yeast. Back again

Hello all! I’ve been m.i.a. For quite a while but I’m home for the summer now and ready to get back at it. I’m starting a new Whole30 tomorrow, maybe less I haven’t decided yet. But either way for as long as I do it I’ll be documenting what I eat here with recipes. I might also put some videos up on my YouTube depending on how much time I have to film as well. So stay tuned for updates and lots of yummy recipes in the very near future! 

Whole30 SWYPO Pancakes

If you’ve done a whole30 I’m sure you know about sex with your pants on (SWYPO) foods. That’s what these are, because they’re pancakes but sometimes you just want a damn pancake so you have one. A lot of people make banana pancakes which are amazing, but I made a little twist on them this morning and these turned out more like a real pancake and they were delicious! 

Chocolate Banana Pancakes

Makes 2 pancakes

What you need:

1 egg 

1/8 cup coconut flour 

1/4 tsp each of baking soda and baking powder 

1 tsp cocoa powder 

1/8 tsp cinnamon 

1 ripe banana, mashed 

1/4 cup of unsweetened almond milk 

What to do:

Mix the dry ingredients then add the egg and mashed banana. Mix well. Add almond milk until you get a pancake batter consistency, you may need more or less milk to get there. Add a little ghee to a pan and then put a dollop of the batter in and spread it out pretty thin. Cook like a traditional pancake and serve. 

Whole5 

I’m home on spring break so I’m doing a whole5 and today is my first day. I went to our new Whole Foods to do a little grocery shopping and ended up stopping by the cold food bar to grab some lunch. I’ve never eaten their prepared for before but I’m really happy with what I got for lunch. Everything is super good! Also I got some fantastic food to eat during the week as well. 

I got a few pieces of grilled chicken and I put some Tessemae’s ranch on them. (My first bottle of Tessemae’s and wow is this stuff good) roasted brussels sprouts, roasted asparagus and purple carrots, cucumber tomato and dill salad and two hard boiled eggs. Super great start to a great week of healthy, whole eating! What are you having today?

Let’s Talk Whole30

Spring break starts on Friday for me and I can’t wait. I’m in desperate need of a break from my studio classes. I’m also in desperate need of food that isn’t fried and breaded and wholly unhealthy. Usually when I’m home for extended periods of time I try to do a Whole__ however long I think is appropriate for the time I’m home. Since I’ll be home for a week and it’s starting to get ice I figure it’s the perfect time to do a Whole5 and start some kind of exercise regimen. I love to exercise outside so I usually never workout during the winter… But I’m more focused on my Whole5 right now. 

For those of you who have never heard of Whole30, it’s a program that is kind of a diet but is more aimed at changing your relationship with food and eating in general. This is the website and it’s filled with all sorts of useful info. Boiled down to its absolute bare bones, Whole30 is essentially a very strict paleo diet that you do for 30 days and then you reintroduce the food groups you cut out. This program literally changed my life. I’ve lost over 50 pounds since my first Whole30 which I did last summer. Although I’ll be home for about 10 days, I’m only doing a Whole5 because I think that’s really all I’ll need I’m trying to get over a weight hump that I’ve been stuck at for a few weeks. I mean I definitely plan on eating tons of fruits and veggies and healthy stuff while I’m home since I have limited access to things like that at school, but I’ll only be strict for five days. I definitely plan on sharing what I’m eating and what workouts I’m doing while I’m home so be on the lookout for posts filled that content!

Wednesday Thoughts

Happy wednesday everyone! I didn’t make an actual post yesterday (this is a lie, I just looked. But I’m gonna continue with this.) so I feel the need to make one tonight even though I’m stressed and v tired, but I have a mug full of wine so we’re gonna do it. Tonight I’m going to talk about my staple makeup. The things that I can’t do my makeup without. Leave me some comments with your must have items because I’m always on the search for new stuff! So here’s my list:

Marc Jacobs Highliner Gel Eye Crayon in Blacquer $25

 I live for this eyeliner! I only use it to tightline my upper lid, but I do that every day because I think it makes my mascara and other liner much more cohesive looking. I got the mini in the Sephora birthday gift last year and I fell in love the second I used it. It’s a little on the pricey side but it’s sooo very worth it. It’s insanely creamy and pigmented and lasts forever on my tightline and water line. They have a huge range of colors in this formula and they just recently came out with a matte line too so if you’re in the market for a new pencil style eyeliner I’d absolutely recommend this one!

Urban Decay Perversion Mascara $22 

My all time ride or die favorite mascara. There is just something about the way this sits on my lashes that I love. It makes the perfect long spidery/feathery lash. It’s my favorite and honestly the only mascara that I use on my lower lashes. I like my lower lashes long and really thin, I hate clumpy lower lashes and this gives me everything I want.

NYC Big Bold Angel Lash Mascara $5 

If you’re in the market for new mascara but you’re balling on a budget check this one out. HOLY SHIT this stuff is amazing and for five bucks, you really can’t beat it. This will give you a nice thick lash and make them crazzy long. This can get a bit clumpy, but I just brush it out with a spooly and I’m good to go. I love to pair this with my Perversion on my top lashes. I have pretty long lashes to begin with but when I pair these two it seriously looks like I’m wearing falsies my lashes get so full and long!

Kat Von D Tattoo Liner in Trooper $20 

I think pretty much anyone who is into makeup knows the glory of this liner so I won’t spell out why I love it because I’m sure you already know how good it is. I will however offer you a cheap drugstore alternative which is the e.l.f. waterproof eyeliner pen. It’s $2 and while it’s not as pigmented as the Kat Von D it is the best felt tip eyeliner from the drugstore I’ve ever used. When I was using this I’d draw my wing with the pen and fill in the wing and across my lid with NYC liquid eyeliner.
