Hello friends! Today I’m going to share my favorite easy whole30 side dish with you, creamy mushrooms. These mushrooms take about 5 minutes to make and are super yummy and simple.
- A handful of sliced crimini mushrooms
- 1-2 tbs compliant mayo (I make the mayo from It Starts With Food)
- Ground coriander
- Salt and pepper
- Garlic powder
Put the mushrooms in a pan with a little oil over medium heat annd add the spices. Stir them around for a few minutes until the start to brown a little then add the mayo, mix and cover with a lid. After about two minutes give them a stir. When the mushrooms start to shrink and there’s liquid in the pan they’re done.
That’s it. 5 ingredients, a few minutes and you have a super simple and yummy side to serve with your dinner. Happy eating!
Hello friends! Today I have a super easy Whole30 breakfast recipe for you. It takes about 25 minutes to make in total. These mini quiches are great in the morning or anytime really when you’re on the go but need to eat. They’re moist, flavorful and chock full of wholesome goodness. Here’s the recipe.
- 8 eggs
- Splash of almond milk
- 1 tsp each of: ground coriander, salt, black pepper
- A dash of onion powder
- chopped or ripped kale
- Compliant bacon
- Nutritional yeast
Whisk the eggs, spices and almond milk together until well combined. Put a little of the veggies and bacon in each cup of a 12 cup muffin tin and then pour the egg mix on top. Sprinkle each with a good amount of nutritional yeast. Bake at 350 for 17 minutes.
I store mine in a baggie in the fridge with a paper towel to catch the moisture and then pop them in the microwave for 30 seconds before I head out the door. I love simple recipes that don’t require me to slave over the stove and this is definitely one of those. And of course of you don’t like and of the veggies I added or you want more all of them are totally changeable. Heck, end of the week? Only have a bell pepper and spinach in your fridge? Throw those in there. This recipe is going to taste great no matter what veggies you use because of the spices. And you don’t miss out on the cheesy flavor because of the nutritional yeast. Hello all! I’ve been m.i.a. For quite a while but I’m home for the summer now and ready to get back at it. I’m starting a new Whole30 tomorrow, maybe less I haven’t decided yet. But either way for as long as I do it I’ll be documenting what I eat here with recipes. I might also put some videos up on my YouTube depending on how much time I have to film as well. If you’ve done a whole30 I’m sure you know about sex with your pants on (SWYPO) foods. That’s what these are, because they’re pancakes but sometimes you just want a damn pancake so you have one. A lot of people make banana pancakes which are amazing, but I made a little twist on them this morning and these turned out more like a real pancake and they were delicious!
Chocolate Banana Pancakes
Makes 2 pancakes
What you need:
1/8 cup coconut flour
1/4 tsp each of baking soda and baking powder
1 tsp cocoa powder
1/8 tsp cinnamon
1 ripe banana, mashed
1/4 cup of unsweetened almond milk
What to do:
Mix the dry ingredients then add the egg and mashed banana. Mix well. Add almond milk until you get a pancake batter consistency, you may need more or less milk to get there. Add a little ghee to a pan and then put a dollop of the batter in and spread it out pretty thin. Cook like a traditional pancake and serve.
Okay friends, I got rid of soooooo much stuff today. I have a ton of things to donate/sell and even more things that just got thrown away. I don’t even know how many things I got rid of. But I honestly probably finished out the entire challenge. I still have a few things I want to get rid of so I’ll probably do that tomorrow.
Hey all! Sorry for my complete absence the last few days, I came home on break this past friday and it’s kind of been a whirlwind of busy. But I have been clearing things out. I’ve gotten rid of mostly clothes while I’ve been here. I have a lot of clothes sitting in drawers at my house that I haven’t touched for months, so they’re gone now. I’m going to take them to a consignment store in the next few days and see if I can’t get a few dollars for them. Other than clothes, I’ve mostly just gotten rid of a ton of random junk. Odd bits of yarn, some old dishes, some shoes, and a few other bits and pieces.
I think tomorrow I’m gonna tackle the stuff at my dad’s house, which is where the majority of my home junk is so that’ll be an all day process. I’ll probably just clear it all and add it up for the next couple of days.
I have to say, getting rid of all this stuff is making me feel a lot lighter and happier.
I’m home on spring break so I’m doing a whole5 and today is my first day. I went to our new Whole Foods to do a little grocery shopping and ended up stopping by the cold food bar to grab some lunch. I’ve never eaten their prepared for before but I’m really happy with what I got for lunch. Everything is super good! Also I got some fantastic food to eat during the week as well.
I got a few pieces of grilled chicken and I put some Tessemae’s ranch on them. (My first bottle of Tessemae’s and wow is this stuff good) roasted brussels sprouts, roasted asparagus and purple carrots, cucumber tomato and dill salad and two hard boiled eggs. Super great start to a great week of healthy, whole eating! What are you having today?
