Mini Quiche

Hello friends! Today I have a super easy Whole30 breakfast recipe for you. It takes about 25 minutes to make in total. These mini quiches are great in the morning or anytime really when you’re on the go but need to eat. They’re moist, flavorful and chock full of wholesome goodness. Here’s the recipe.

Mini Quiche

Makes 12

  • 8 eggs
  • Splash of almond milk
  • 1 tsp each of: ground coriander, salt, black pepper
  • A dash of onion powder
  • chopped or ripped kale
  • Broccoli
  • Compliant bacon
  • Nutritional yeast

Whisk the eggs, spices and almond milk together until well combined. Put a little of the veggies and bacon in each cup of a 12 cup muffin tin and then pour the egg mix on top. Sprinkle each with a good amount of nutritional yeast. Bake at 350 for 17 minutes.

I store mine in a baggie in the fridge with a paper towel to catch the moisture and then pop them in the microwave for 30 seconds before I head out the door. I love simple recipes that don’t require me to slave over the stove and this is definitely one of those. And of course of you don’t like and of the veggies I added or you want more all of them are totally changeable. Heck, end of the week? Only have a bell pepper and spinach in your fridge? Throw those in there. This recipe is going to taste great no matter what veggies you use because of the spices. And you don’t miss out on the cheesy flavor because of the nutritional yeast. Let me know if you make the recipe and how you liked it or if you mixed it up. Happy eating!
